Step 1: Prepare a template for the gingerbread men.

Set the finished template aside and move on.

Step 2: Prepare the dough for the gingerbread men.

There are a lot of options for preparing the dough, but the option I have proposed has already been tested and tested more than once. In a deep saucepan for dough, mix butter, salt, soda and spices - ginger, cloves and cinnamon. Add sugar and liquid honey and with a mixer begin to whisk in a homogeneous mass. Cocoa or coffee should be dissolved with 4 tablespoons of boiling water, let it cool and then pour into the future dough, adding eggs. Add 3 cups flour and continue whisking. Add the remaining flour and begin to knead the dough with your hands. Try not to knead the dough for a long time. It should turn out quite dense, wrap it in cling film and put it in the refrigerator. It is better to clean it all night and continue cooking in the morning, but try to hold it for at least 4-5 hours.

Step 3: Form the Gingerbread Men ...

When the dough is infused, we take it out of the refrigerator, remove the film and put it on the rolling surface. We need to roll it into a layer like a regular shortbread dough. So that the dough does not stick to the table and the rolling pin, you need to sprinkle them with flour a little. However, try to minimize the addition of flour at the same time so as not to spoil the taste of future cookies. From the rolled dough with the help of a template, cut out the little men, which we put on a baking sheet lined with baking paper. We bake cookies in the oven at a temperature of 160 degrees for about 13-15 minutes. We take out the finished cookies from the oven and leave it on the table so that it cools down.

Step 4: Make icing and decorate the gingerbread men.

While the little men are cooling down, we can easily make the icing - we separate the egg white from the egg and beat it with a mixer in a strong foam. Then add the icing sugar and continue whisking. When you get a uniform cream, pour the lemon juice and mix thoroughly. Glaze is ready! With the help of a confectionery syringe, we apply glaze on the little men, drawing them faces, clothes with buttons and anything that suits your imagination. When all the little men are decorated, it is necessary to freeze the glaze - you can dry the cookies in the oven, or you can just leave it at room temperature for several hours, or better all night.

Step 5: Serve the gingerbread men.

Gingerbread men can crunch just like that, or can be combined with tea, milk, cocoa or coffee. Please the children, surprise the guests - this is the perfect solution for a dessert on the New Year's table. Enjoy your meal!
