- 1 tablespoon unsalted butter, melted
- 1 teaspoon plain flour, or as needed
- 425g prepared shortcrust pastry
- For the cheesecake layer
- 225g cream cheese
- 100g soft dark brown sugar
- 1 large egg
- 1 tablespoon bourbon
- 1 teaspoon vanilla extract
- 1/4 teaspoon sea salt
- For the pecan pie layer
- 80ml golden syrup
- 75g soft dark brown sugar
- 1 large egg
- 1 tablespoon bourbon
- 1 teaspoon vanilla extract
- 1/4 teaspoon sea salt
- 75g chopped pecans
- 10 pecan halves

- Grease a muffin tin generously with melted butter, including the entire top of the tin.
- Dust a flat work surface with flour. Roll out shortcrust pastry; cut out 10 (10cm) circles of pastry using a round cookie cutter.
- Place pastry circles into the muffin holes, working quickly and pressing down centre of pastry to ensure pastry coats the sides. Smooth down the top edges so the mini pie cases are uniform and even. Refrigerate until ready to use.
- Beat cream cheese, 100g brown sugar, 1 egg, 1 tablespoon bourbon, 1 teaspoon vanilla extract and 1/4 teaspoon sea salt in a bowl using an electric mixer until cheesecake mixture is well combined and no lumps remain, scraping down sides of the bowl as necessary.
- Whisk golden syrup, 75g brown sugar, 1 egg, 1 tablespoon bourbon, 1 teaspoon vanilla extract and 1/4 teaspoon sea salt together in a separate bowl to make the pecan pie filling.
- Preheat oven to 180 C / Gas 4. Move oven rack to the lowest shelf in the oven.
- Fill the chilled pastry bases 2/3-full with the cheesecake mixture using an ice cream scoop with a lever. Knock the bottom of the muffin tin onto the counter to expel air bubbles. Top each pie with 1 tablespoon chopped pecans; fill to the top with pecan pie filling. Garnish the centre of each pie with a pecan half.
- Bake on the lowest rack in the preheated oven until puffed and golden, about 40 minutes. Cool on a wire rack for at least 2 hours.
You can use the lid of a large yogurt container to cut out the pastry.

So, I’m going to get a little controversial today. I know a lot of people are all about pumpkin flavored everything once fall hits but I’m really more of a pecan girl. Don’t think less of me! I grew up in the south and my grandma had a pecan tree in her backyard. I grew up eating pecans straight from the tree, or better yet in a homemade pecan pie straight from grandma’s oven!

Now that I’m all grown up and I do my own baking I use pecans in all sorts of recipes from my Pecan Pie Cake Roll to my Apple Pecan Stuffing. With the recent change in the weather (I love fall weather!!) I have been inspired to start my fall baking and the first thing I tried out was this amazing Mini Chocolate Pecan Pie Cheesecake. The name speaks for itself, I mean how much better can you get that chocolate, pecan pie, and cheesecake all baked into one delicious dessert?
These Mini Chocolate Pecan Pie Cheesecakes are a simple cheesecake mixture made with cream cheese, sugar, eggs, flour, and vanilla baked on top of a pecan crust. That alone is pretty darn delicious but the real star is the dollop of chocolate pecan pie filling on top. The pecan pie filling is just like my mom, and my grandma before her, uses for her pecan pies but instead of pouring it into a pie crust and baking it I cook it on the stove top until it thickens and then at the very end you add a handful of chocolate chips and…well it’s pretty awesome. After the cheesecakes cool, I add a little bit of chocolate pecan pie filling to the top of each. You don’t need much, a little less than a tablespoon, it’s pretty powerful stuff!
When you get a bit of everything all together it is pretty much heaven. The pecan crust and the cheesecake cuts the sweetness of the chocolate pecan pie filling and everything melts together into one perfect bite. If you aren’t a pecan lover before you make this Mini Chocolate Pecan Pie Cheesecake you will be when you’re done!

Pecan Pie Cheesecake
As I told you earlier in the week, one of our Thanksgiving desserts was this cheesecake recipe I&rsquove been waiting rather impatiently to make. It takes two of my very favorite things &ndash pecan pie and cheesecake &ndash and makes one fantastic dessert.
First, a bit about the preparation. This is one of the simplest cheesecakes I&rsquove ever made. The crust was a breeze &ndash only three ingredients. I decided to sacrifice full crust coverage for a bit thicker crust. So, it didn&rsquot go all the way up the sides, but each bite provided more crust. The cheesecake filling did cause me a few fretting moments, as I worried that it was too thin. It was indeed much thinner than any other cheesecake I&rsquod made previously. My worries were for nothing, though, as it baked up perfectly. And without a crack in site, I might add.
We had several desserts to choose from, but I don&rsquot hesitate to say that this one was by far the most popular. Some of the comments heard around the table: &ldquoThat&rsquos the best cheesecake I&rsquove ever had.&rdquo &ldquoDon&rsquot ever make any other cheesecake.&rdquo &ldquoCan we have this again for Christmas?&rdquo &ldquoThat&rsquos the best thing I&rsquove ever eaten.&rdquo A couple of folks even secretly wrapped up and hid pieces to ensure that seconds would be enjoyed later. I don&rsquot say these things to imply praise of my own baking. I say them to encourage you to make this cheesecake!
So, it seems this one may make another appearance for Christmas. As for me and Quinn, well, we happened to be lucky enough to make it home with a couple of pieces ourselves.
