Italian soup with pearl barley and beans


Ingredients for Italian Pearl Barley and Bean Soup

Cooking Italian soup with pearl barley and beans:

Step 1: Cook the Beans.

In order for the beans to cook faster, you can soak it overnight in water. Before boiling the beans directly, drain the water from it, rinse under running water and pour 2 l of cold water. Put the beans on a fire and bring to a boil. Remove the foam from the water, add the bacon to the pan (in a whole piece, do not cut). Add bay leaf to the pan, cover and cook for 30-40 minutes.

Step 2: prepare the pearl barley.

Rinse pearl barley under running water and let the water drain.

Step 3: cut the vegetables.

Cook the vegetables while boiling the beans. Peel the carrots and onions, cut into medium-sized cubes. Rinse celery under running water, cut the stems with greens into medium-sized pieces. Heat olive oil in a pan, stew the onions for several minutes, then add carrots and celery to the pan. Stew the vegetables for a few more minutes, then add the barley and fry for 3 minutes, stirring continuously.

Step 4: prepare Italian soup with pearl barley and beans.

To the finished beans in a pan, add vegetables and cereals, fried in a pan. Bring the soup to a boil, add salt and pepper to taste. Next, cook the soup on low heat for 20 minutes. At the end of cooking, remove the bacon from the soup and cut it into thin slices. Put it back in the soup and add the thyme.

Step 5: serve the dish to the table.

Pour the finished soup into plates and serve hot to the table, decorating with a sprig of greens on top. Enjoy your meal!

Recipe Tips:

- - In addition to onions and carrots, you can add potatoes to the soup for a more satisfying dish.

- - For greater severity, you can add garlic to the soup, having previously fried it together with onions.

- - The greens, also fried in a pan and added to the soup during cooking, will not interfere with the soup.
