Cooking Potato Cookies:

Step 1: prepare the potatoes.

Step 2: prepare the raisins.

We spread the raisins in a deep bowl and wash it several times under running water. After that, fill in dried fruit with warm water and leave on 20 minutes.

After that, we again drain the liquid from the container, and wipe the raisins dry with kitchen paper towels. In the meantime, pour a small amount of flour into a free plate or bowl and roll dried fruit in this dry mass.

Step 3: prepare the eggs.

Using a knife, break the egg shell, and pour the yolk and squirrel into different deep bowls.

Step 4: prepare the lemon.

First we wash the lemon under running water, and then we wipe it dry with a paper towel. Using a fine grater, rub the peel of citrus directly into a free saucer.

Step 5: prepare potato dough - the first step.

So, add egg yolks, 50 grams of flour, dried yeast and sugar to the mashed potatoes.

Step 6: prepare the egg whites.

Step 7: prepare potato dough - the second stage.

Add whipped proteins to the potato mixture and mix everything together with a tablespoon, but always from the bottom up and with extreme care. Then the potato cookies will turn out to be airy and very tender. Then add lemon zest and cinnamon to the dough, and again mix everything well until smooth. At the end, add raisins to the potato mixture and mix everything with a spoon for the last time.

Step 8: Cooking Potato Cookies

Grease a baking sheet with a pastry brush with vegetable oil and sprinkle with flour. One tablespoon spread the test mixture on a baking sheet. Put cookies in the oven and bake for 20-25 minutes at a temperature 180 ° C. After the allotted time, with the help of kitchen gloves, we take out the container from the oven and set aside to cool down to a warm state.

Step 9: serve the potato cookies.
