Cooking fried whitefish:

Step 1: prepare the fish.

Sig is a very tasty fish, which by its taste and family ties belongs to the family of valuable fish, for example, salmon. Only the meat of this fish is white, not red. In addition to whitefish, fish is very useful for our body, as it contains vitamins such as A and D. And this, in turn, improves vision and strengthens bones. That is why this fish must be served to the table, especially since the dishes from it are very tasty. Indeed, despite the fact that this fish has rather fatty meat, it is easily absorbed by our body and is useful even for those people who have stomach problems. Cooking fried whitefish is best done with fresh meat and cut the fish yourself. That's why for starters we will process our main ingredient. So, we wash the fish well under cool running water and put it on a cutting board. With the help of a sharp thin but long knife, we make an incision behind the pectoral fins and gills in depth to the bone. We turn the knife and make an incision along the spine from one side of the carcass right up to the tail. Attention: We try to cut off the flesh of the fish, leaning with sharp equipment as close to the bone as possible so that after - on the spine there are no pieces of pulp of the component of the dish. Then, holding the meat of the upper part of the fish, with wide movements of the knife we ​​make an incision in depth to the ridge along the entire spine towards the tail. After completely cut off the pulp on the tail, separating the fish fillet from the carcass itself. And in the end, holding the fillet with your hands, cut off the flesh of the fish, starting from the tail and ending with pectoral fins. We perform the same procedure on the other side of the whitefish, carefully separating its flesh from the spine. When the filet is ready, use your fingers to check the flesh of the fish for bones. If you felt them, then using tweezers, we get them out of the meat. And also with a knife, carefully cut the remains of the fins along the edge. After - on the same cutting board using the same sharp tools, cut the fillet into small pieces. From the calculation of the weight of the fish indicated in the recipe, you should get approximately 8-9 pieces. The chopped ingredient is transferred to a deep bowl.

Step 2: prepare the flour.

Pour flour, turmeric, salt and ground black pepper to a deep bowl. Beat everything well with a hand whisk until a homogeneous mass is formed.

Step 3: prepare the egg.

After that, we break one chicken egg into another deep bowl and beat the component either with a hand whisk or mixer until smooth.

Step 4: prepare the oil.

We spread the butter in a pan and put on medium heat. Stirring it with a wooden spatula, melt the ingredient to a liquid state. After - add to the container 1-2 tablespoons of vegetable oil and go to the main stage - whitefish roasting.

Step 5: prepare the fried whitefish.

The oil in the pan warmed up well, so we make the fire less than average. Immediately after that, lay the whitefish fillet in the egg mixture and soak it well on both sides. Then we shift the ingredient and roll on both sides in a flour mixture. Shaking off excess flour on weight, transfer the fish pieces into a pan. We fry the fish ingredient on both sides until a brown crust is formed. And thanks to a spice such as turmeric, the color of the fish is a golden hue. After the whitefish is well cooked on both sides, with the help of a fork, we transfer it to kitchen paper towels so that excess fat is stacked from the dish. If desired, you can still salt the fish a little more.

Step 6: serve the fried whitefish.

As the whitefish has cooled off a bit, transfer the fish to a serving dish and decorate it with sprigs of fresh herbs and a slice of lemon or lime. You can savor fried whitefish with a glass of dry white wine and a slice of sesame bun. Good appetite!

- - To prepare this dish, it is best to take fresh whitefish. In another case, if you still purchased fresh-frozen fish, put it in a deep bowl and wait until the ingredient reaches room temperature. In no case do we defrost the whitefish with a microwave or hot water, as this can damage the taste and aroma of the dish.
