Apple-curd cakes

Ingredients for making apple-curd cakes

To make butter shortcrust pastry we need:

  1. 2 eggs
  2. Butter 165 grams
  3. Powdered sugar (preferably immediately vanilla, so as not to add vanilla sugar) 110 grams

  5. Lemon zest 2 teaspoons
  6. Salt 0.5 grams
  7. Premium wheat flour 165 grams

To prepare the curd mass we need:

  1. Cottage cheese (10% fat) 800 grams
  2. Riccot 200 grams
  3. Butter 200 grams
  4. Vanilla Sugar 20 grams
  5. Lemon zest 1 piece
  6. Salt 1.6 grams
  7. 6 egg yolks
  8. Premium wheat flour 100 grams
  9. Raisins 60-80 grams to taste
  10. Egg whites 6 pieces
  11. Sugar 170 grams
  12. Large sweet and sour apples 6 pieces

To make jelly, we need:

  1. Pectin (gelfix) 10-15 grams

Cooking apple-curd cakes:

Step 1: Prepare the dough for the cake.

To begin, combine the eggs with vanilla sugar in a deep bowl (if you use regular icing sugar), carefully rub with a tablespoon to completely dissolve the sugar. Then add icing sugar, salt and lemon zest. Mix well. Heat butter until soft at room temperature and add to eggs, also add granulated sugar, mix well. Sift through a fine sieve directly into a bowl of wheat flour, then add starch. Knead everything thoroughly with a tablespoon first, so that the ingredients mix well until a homogeneous mass is formed. Then continue to roll out the dough on the working surface of the table, sprinkled lightly with flour manually until a soft and elastic state. Roll out the finished dough into a large rectangular layer (roll out the dough according to the size of your baking sheet) and gently lay it on a baking sheet covered with parchment paper.

Step 2: Bake the finished cake for the dessert in the oven.

Preheat the oven up to 180-190 degrees. Baking tray with a base for cakes for 15 minutes. Then, one at a time, add the egg yolks to the bowl, while continuing to beat without stopping. Slowly add flour previously sifted through a fine sieve and add raisins. In a separate container, beat the whites mixed with granulated sugar until white peaks form. Then very carefully add them to the curd mass, smooth movements from the bottom up to save as much air as possible in the curd mass (so it will turn out much more magnificent and more beautiful)

Step 4: Put the dessert on a baking sheet and bake it in the oven.

Now thoroughly wash the apples under cold running water, then peel them and grate them on a coarse grater. First, spread the curd mass on a cooled cake, in a uniform layer (do it with smooth movements). Place grated apples on top very carefully. Preheat the oven up to 160 degrees. Place the baking tray with dessert in the oven and bake until cooked, about 50 minutes. After the dessert is baked, it should be completely cooled to room temperature.

Step 5: Prepare jelly for watering the dessert.

At this time, you can cook jelly. Combine yellowfix (pectin) in a small saucepan with green tea infusion, add granulated sugar and mix thoroughly. Then put it on medium heat, bring to a boil, boil for no more than 3 minutes, remove from heat and let cool.

Step 6: Serve apple-curd cakes.

When both the dessert and the jelly have cooled, pour it with ready-made jelly and place in the refrigerator for literally an hour. Then cut into portioned cakes and serve. Good appetite!
