Chebureks with mushrooms


Ingredients for Making Chebureks with Mushrooms

For the test:

  1. Premium wheat flour 3-4 cups
  2. Drinking water 100 ml.
  3. Kefir (fat-free) 100 ml.
  4. Salt to taste

For filling:

  1. Mushrooms (fresh champignons) 1 kg.
  2. Onions 1-2 pcs.
  3. Cheese (hard) 100 gr.
  4. Mayonnaise 50 gr.
  5. Dill or onion greens 1 bunch
  6. Vegetable oil to taste

Cooking chebureks with mushrooms:

Step 1: Knead the dough on chebureks.

Pour kefir into a bowl and dilute it with drinking cold water. Pour flour and salt in portions and knead the dough, which should turn out to be quite elastic. Sprinkle flour on the working area, shift the dough from the bowl and cover it with a towel.

Step 2: Prepare the filling.

Now we are going to prepare the filling. To do this, wash all my mushrooms under cold running water. Then we transfer them to the pan, fill with water and set to cook over medium heat in within 10-15 minutes. Do not forget to salt to taste. Then we drain the water from the mushrooms and cool a little. Now we need to grind them. I did this with a meat grinder, but you can also use a blender or just chop them finely. Onions are also passed through a meat grinder or chopped. We shift everything into a bowl and add the grated cheese and mayonnaise, mix thoroughly and, if necessary, add a little more salt. Quickly finely chop the greens and put it in a bowl. The filling is ready!

Step 3: Cook the chebureks with mushrooms.

From the rest of the dough, we pinch off a piece and roll it into a cake, put two tablespoons of the filling in the middle of each (maybe more, depending on the size of the cake), and pinch the edges. We put on a medium heat to heat a deep frying pan, pour vegetable oil and put it in turn to fry on both sides of the pasties until a golden crust is formed. Then we transfer them to a paper towel in order to remove excess oil.

Step 4: Serve the pasties with mushrooms.

Put the finished pasties on a serving dish and you can call households to the table. Enjoy your meal!

Recipe Tips:

- - You can also prepare a lighter version without adding mayonnaise and cheese to the filling.

- - We can fry pasties in deep fat.

- - You can knead the dough for pasties without kefir, but with it it turns out more elastic.
