Cooking fish souffle:

Step 1: Prepare the fish.

In a pan, draw clean water, put it on a strong fire, add salt and bring to a boil. Rinse the fish fillet well under running clean water, then dip in boiling water, then add a sprig of rosemary. Bring everything to a boil, then reduce the heat and cook for 10 minutes. Then remove the pan from the heat, drain the water, and cool the fish a little. Now cut the boiled fillet into pieces and put in a blender. Grind the cod to a uniform consistency and transfer to a bowl.

Step 2: Beat the eggs.

Now separate the egg whites from the yolks. Beat the whites first with a pinch of salt. Beat until a dense foam forms. Then lightly beat the yolks with the cream, then add the mixture to the fish. Also chop the arugula in a blender, add to the fish. Mix everything thoroughly, then add the whipped proteins and mix very carefully again. Try to make movements from the bottom up to keep as much air as possible in the fish mass.

Step 3: Bake the souffle.

Lubricate the soufflé molds with butter, and do not forget about the sides. Then lay the souffle over them. Preheat the oven up to 200 degrees then place the soufflé tins inside and bake about 15-20 minutes.

Step 4: Serve the fish souffle.

Remember that the exact baking time depends on the size of the tins and the amount of souffle in them. As a decoration, you can use peas of pink pepper, but only if the cooked souffle is intended for adults, and not for children. Souffle can be served both in cold and in hot form. Good appetite!

Recipe Tips:

- - If you add boiled potatoes to the recipe for this dish, then the souffle will have a less pronounced taste of the fish.

- - In order for your baby’s nutrition to be truly complete, it is recommended to include various fish dishes at least once a week in his diet. Fish souffle is a great recipe for kids.

- - If you are preparing a fish souffle for very young children, then try to choose fish of low-fat varieties. Carefully ensure that there are no seeds in the meat.
