He surprised me with it after I came home from a long day from work and it was so good that I gobbled it down in record time. Don’t you just love when you come home and dinner is all set and ready? Well this recipe is so easy to throw together that you’ll be eating it in no time, even if it’s all up to you.

This tuna salad with pecans and raisins uses such simple ingredients and tastes so fresh. You’ll be packing it up for lunch tomorrow, if you have any leftovers that is. It’s also a really budget friendly recipe that will keep you full for hours, win win!

  • Depending on how you like your tuna salad, you may want to add some extra spices to this mixture. For many people, tuna salad needs celery seed or celery salt, so throw that in if that is something you love. A reader also commented that she adds lemon pepper and it turns out delicious, so you may want to try that. Personally I love adding curry powder to tuna, so sometimes I toss some of that in as well. Mix it up with spices to make it exactly how you like it.

  • While the sour cream isn't completely necessary, it really does add an extra level of creaminess and tartness to the salad. I highly recommend adding it, you'll be shocked by the difference it makes in a simple recipe like this.

Apple Cranberry Tuna Salad

As a member of the Cranberry Bog Bloggers I receive the latest news and studies about cranberries as well as some fun Bog Blogger swag from the Cranberry Institute. I was not compensated for this post and as always all opinions are my own.

I have a really quick and easy recipe to share with you all today. Back in 2011 this Apple Cranberry Tuna Salad was included in my cookbook We Can Cook: Introduce Your Child to the Joy of Cooking with 75 Simple Recipes and Activities and to this day it’s a recipe I make on a regular basis for lunch for the kids and myself and for weekend bagel brunches. The cookbook is now out of print (whomp whomp), so I thought it was time to share the recipe here.

In addition to being quick and easy, this Apple Cranberry Tuna Salad is nutritious and delicious, plus the kids can help you make it. Serve the tuna salad between two slices of whole grain bread, scoop it up with crackers, or top a mixed green salad with it like I do for a weekday lunch. No matter how you eat it, you’ll enjoy all the flavors and textures from every bite – crunch from the apple, sweetness from dried cranberries, and a little tang from the lemon. Plus, you’ll get a dose of heart-healthy omega-3 fatty acids from the tuna.

I wanted to add a special note about the addition of dried cranberries here, as I’m sure some of you may be wondering about the added sugar from these little guys. You’ve heard the news about the updated 2015-2020 Dietary Guidelines, right?! One of the key changes in the new guidelines is the recommendation to limit added sugars to less than 10 percent of calories per day. Well, within the section on added sugars, the Dietary Guidelines make a special call out for cranberries (and rhubarb, one of my favorite spring ingredients!):

There is room for Americans to include limited amounts of added sugars in their eating patterns, including to improve the palatability of some nutrient-dense foods, such as fruits and vegetables that are naturally tart (e.g., cranberries and rhubarb). Healthy eating patterns can accommodate other nutrient-dense foods with small amounts of added sugars, such as whole-grain breakfast cereals or fat-free yogurt, as long as calories from added sugars do not exceed 10 percent per day, total carbohydrate intake remains within the AMDR (Acceptable Macronutrient Distribution Ranges ), and total calorie intake remains within limits.

This exception for cranberries is due to the tart little berry’s nutrient density and numerous health benefits, including reduction of urinary tract infections, heart health benefits, and gut health promotion. How To Meal Prep Salads In A Jar

When it comes to gathering ideas to meal prep, making a salad is a mason jar is a great option! But it comes with 4 important rules to make it efficient and to prevent having a soggy salad.

  1. Choose a day to meal prep your salads a shop for all the ingredients, including dressings.
  2. Have large 32 oz mason jars ready and clean for assembling your salads. I used these fun Vintage blue mason jars from Ball Canning.
  3. Put out all the ingredients at once on a large baking sheet so when you create the mason jar salads they are quick and easy to put together.
  4. Make sure to layer the jars accordingly:
    • First the dressing or salsa.
    • Second the vegetables, legumes, beans followed by any fruit and tomatoes.
    • Third add any nuts.
    • Fourth add the lettuce and salad greens.
    • Fifth add any guacamole, avocado slices or croutons either before or after the lettuce and greens. You just want to make sure not to weigh down the greens or let liquid get to them.

A great tip is to gather all your ingredients like in the above picture. Then start filling the jars in the layers as listed in the recipes. This also makes the clean-up incredibly quick!

It is important when meal prepping salads in a mason jar to make sure to start with liquids and then dense or heavier solid foods first, then work your way up to lighter foods and always having the lettuce last (on the top).

These meal prep ideas will help you save time, keep your weight loss goals in check, and helps prevent binge eating. We tend to overheat when we get too hungry and having a meal prepped and in place makes it easy grab when you are hungry. Make all four of these mason jar salads and have them ready for the next four days.

And they are not just good for lunches. I love to make these mason jar recipes to have a quick salad ready for dinners! Just take the filled mason jar and dump each salad into a large bowl, then toss it together to combine the ingredients. Enjoy!

Could i use chicken instead of tuna?

You’ll love how versatile this recipe is! I know tuna is an acquired flavor for some, so chicken is totally acceptable. Canned or shredded chicken works great.

If you do decide to use chicken, s ave yourself tons of time by using a rotisserie chicken instead of cooking and chopping your own! Most grocery store delis will sell freshly packaged rotisserie chicken pulled off the bone.

If your local deli does not sell pulled rotisserie chicken, you can also buy a whole chicken and freeze what you don’t use for another time.

You could also use shredded turkey for this recipe. I personally prefer the tuna or chicken, but any would be delicious.

How to make Tuna Salad

It’s so simple that you could practically do it in your sleep. That’s what makes it such a great last minute option for lunch! Here is how you make it.

  • Chop your apples, nuts, green onions, and parsley into small pieces. Add then to a medium-sized bowl, or large bowl one if you are making a double batch.
  • Drain the tuna. Combine tuna in the bowl using a fork to flake and break up the large pieces as you mix.
  • Add the mayo, mustard, sea salt, and black pepper. Gently stir to mix.
  • The total time should only take about 5 minutes. Eat it out of the bowl or serve it one of the ways suggested below.

This delicious salad is even better for you when you use homemade mayo.

What can you mix with tuna instead of mayo?

Oh! But I absolutely must mention: DO try making your own mayonnaise — for this recipe, and for all your mayo needs. It is so, so easy. And you can avoid all the gross and troubling ingredients commonly found in conventional mayonnaise. (Here’s my simple and scrumptious recipe. Seriously, if you haven’t tried it, you must. You will never go back. All my friends are now converts. Even the ones who never make stuff from scratch.)

Yet if you are sure you don’t want to use it or maybe you just don’t have time to whip up a batch, Greek yogurt or sour cream could work. I always use my own mayo, so I haven’t tested them. If you try them out please let me know in the comments!

Tuna Salad with Apples – Storage Options

Tuna should never be left out at room temperature for more than 2 hours to prevent bacteria from growing. Your best bet is to stick in the fridge as soon as you make it if you are not going to eat it right away. Tuna salad will stay fresh in the refrigerator for 3-4 days.

Can tuna salad be frozen?

You can, but if you are particular about texture, you may not want to. Mayonnaise separates when frozen. The texture of the apples and herbs will be different as the dish defrosts. If you are going to freeze this tuna salad recipe, chose an air-tight, freezer-proof container. Use within 1 to 2 months.

It can totally be done if you are okay with the texture not being quite the same.
